Irish Soda Bread

My kids love Irish soda bread and I make it often (not just on St. Patrick’s day)…this version turns up the volume by adding freshly grated orange zest and a bit more sugar than usual. 4 cups all-purpose flour 6 tbsp sugar 1 tsp baking soda 1 1/2 tsp kosher salt 4 tbsp (1/2 stick) cold, unsalted butter, cut into 1/2-inch cubes 1 3/4 cups cold buttermilk, shaken (in a pinch I use 6 tbsp of dried buttermilk powder mixed into dry ingredients and 1 3/4 cups cold water) 1 extra-large egg, lightly beaten 1 tbsp freshly grated orange zest 1 1/4 cup cried currants Preheat the oven to 375 degrees F and line a sheet pan with parchment paper. Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
