This 10 minute dinner is fast to prepare and good for you – win, win!
1 lb spaghetti
1/3 cup extra virgin olive oil
6 garlic gloves, shaved (I use a mini mandoline)
fresh or dried red chillies to taste (I like 1 small fresh or 1/2 tsp dried)
1/3 cup white wine (or pasta cooking water)
1 cup grape tomatoes, cut in half
6 cups fresh baby spinach
sea salt, fresh pepper and freshly grated parmesan cheese to taste
Cook the spaghetti in boiling, salted water until al dente – drain. In the meantime, put the garlic, chili and olive oil in a large pan over medium heat. Cook, stirring often for 2 minutes. Add tomatoes and cook for another 3 minutes. Add wine or scoop some pasta water; cook for another minute. Season with salt and pepper. Add the drained pasta and toss to coat well, then serve with lots of freshly grated parmesan cheese.
