Good Morning! (with homemade granola)

I try to always make sure we have a batch of granola around the house – the kids like it for breakfast, you can pack it for a snack and I love it over frozen yogurt. This is a basic recipe, but you can mix anything you like.

For chocolate granola add 1 cup of chocolate chips (Scharffenberger 62% semisweet chunks); omit the cinnamon.

For fruity granola mix in dried fruit like sliced apricots, cherries, cranberries or raisins.

3 cups old-fashioned rolled oats

1 cup sweetened shredded coconut

1 cup sliced almonds

1/2 tsp cinnamon

1/2 cup vegetable oil

1/2 cup good quality honey

1 cup of mixed dried fruit or chocolate chips

Preheat oven to 325 degrees.

In a large bowl, toss together the oats, coconut, almonds and cinnamon. Whisk together the oil and honey in a small bowl. Pour wet ingredients over the oat mixture, mix well until all the oats are coated.

Spread mixture on a sheet pan and bake until golden, about 25 minutes. Allow to cool and add dried fruit or chocolate chips.

Keeps well, in an airtight container for about 2 weeks.
