Think Spring with decorated Vanilla Cupcakes!

I love making these cupcakes for birthday parties…and they look great decorated with simple vanilla icing. My mom sent these cute candy flowers from Germany yesterday, but you can decorate with fresh raspberries or blueberries.

FullSizeRender9 tbsp unsalted butter, softened

1 cup sugar

2 teaspoons pure vanilla extract

3 eggs (at room temperature)

1 1/2 cups cake flour, sifted

1 tsp baking powder

1/2 tsp kosher salt

3/4 cup milk

Makes 12 cupcakes

Preheat oven to 350 degrees. Line muffin pan with paper liners.

Sift the flour, baking powder and salt into a large bowl.  In bowl of an electric mixer fitted with paddle attachment cream the butter and sugar on medium speed for 3 minutes, until light and fluffy. Add eggs, one at a time, beat well after each addition.

With mixer on low add the flour mixture, alternating with the milk. Spoon batter into prepared tins and bake for 20-25 minutes, until a toothpick comes out clean.

Cool for 10 minutes in pan.


1 cup confectioners sugar

5-6 tsp hot water

4 drops of  pure vanilla extract

Place all icing ingredients in a bowl and mix well. Ice the cupcakes when cold and top with decorations.
